Blackberry Honey

Oregon, Washington, and California account for the bulk of blackberry production for the fresh market wholesale and processing. The 2002 US blackberry production was valued at over $25 million, with the bulk of the crop turned into preserves, jams, and jellies.

Without proper pollination, the aggregate small fruits that create a blackberry will not develop, and the crop loses value.

The number of hives required for pollination varies from cultivar to cultivar. However, the Blackberry Honey produced is light and sweet, with a tang reminescent of the Blackberries of the Pacific Northwest.
