Chicory Honey

Our Chicory Honey derives from the pollination of chicory blossoms in the Pacific Northwest. Blooms extend from late June until October, being present when many other plants are not producing flowers. Chicory Honey has a nice caramel taste.
Chicory originated in Eurasia, and was brought to the United States by the colonists as a medicinal plant, though it was also grown as forage for cattle. Related to the daisy, it grows at low elevations in areas of grassland and disturbed soil. Chicory goes by other names as well, including succory, blue daisy, blue endive, and coffee-weed. Cooks may recognize a variety of chicory, radicchio.
