Honey Dust

Honey Dust is free-flowing granular mix of sugar and dried honey. Use this if you feel more comfortable with a granular sweetener, yet desire the distinct flavor of honey in your products. Honey Dust can be used as a one-to-one replacement for either cane sugar or honey. Plus, it tastes sweeter - you can use less Honey Dust in your cooking than regular sugar, thereby reducing calories! Applications include baked goods, confections, cereals, seasoning blends, snacks, sauces, and beverages.
Honey Dust can go by a number of names, including Sucanat with Honey, and Rapadura with Honey. (Other common names include Panela, Raspadura, Chancaca, and Piloncillo.)
Sucanat (et al) is the pure juice created from crushing sugar cane. The water is evaporated off to dryness while being stirred, producing a granular form of honey that still has the molasses present. It is not heated to a high temperature, and no chemicals or anti-caking agents are used.
For Honey Dust, roughly 10% honey is added to the sucanat as it is drying. This creates free-flowing crystals that are instantly soluble and non-hygroscopic.
